‘Claire has made a big impact on our Company and its people. She, of course, has a reputation for creating world-class pastry, but her effect goes much further than this. She sets standards for hard work, good preparation and planning that we’ve not seen before. She engages with and values the people in the kitchens, regardless of their relative skill levels and she makes people want to do better.
Finally, she thinks and acts like a businesswoman; she considers process, efficiency, market, scale of production and all the things I have to concern myself with and that so few chef’s do.
