‘It was an absolute pleasure to work with Claire. Our Head Pastry Chef and I worked closely with Claire on a consultancy basis in which she brought fresh and creative ideas to our team, keeping in mind the true essence of the Benares menu and flavours.
Specifically, we worked closely together to create the Chocolate Peanut-butter Tube, Jaggery Cake with Cumin and Marshmallow and Sugar-cane Ice Cream. This is one of our most requested desserts and really showcases Claire’s ability to recognise the essence of a restaurant’s vision and work with it to create a dish that the guests love.’
